1-Boil unpeeled Purple Sweet Potatoesuntil tender.
2-Wait until they cool then peel the skins off with your fingers
3-Mash until smooth
4-Add salt, sugar and coconut cream
5-Mash all ingredients together
Scoop the Purple Sweet Potato into the bottom of the parfait cup, then add a scoop of cool whip, next add your favorite parfait layer*. Continue until the parfait cup is filled. The cool whip should be on top then sprinkle with coconut nuts or your favorite healthy topping. Serves 6.
